Poilâne is the favourite bread of Parisians and even though it is sold in many restaurants and shops in the city, the establishment on rue du Cherche-Midi is the place where this delightful bread comes from. Pierre Poilâne opened this famous bakery in 1932 and over the years he distinguished himself for using traditional baking methods and natural ingredients and Parisians began calling his specialties simply Poilâne bread. When his son Lionel took over the business in the seventies he didn't change the recipe or the methods, he only incorporated the technology to streamline the baking process. The famous Poilâne sourdough breads (les miches) are still baked for an hour in wood-burning ovens like they used to in 1932 and they still incorporate the finest French flour and sea salt from France's Atlantic Coast. Poilâne also bakes an asortment of breads made with rye, raisins or walnuts, the "Punishments" butter cookies and delicious apple tarts. The decorated breads are especially popular - the bread loaves sport original designs according to the months of the year.
